Pumpkin Chocolate Chip Muffins
I am always searching for recipes that can easily be frozen and thawed and still taste good. So I was super happy when I came across this recipe from moneysavingmom.com which is my new favorite website/blog??
Pumpkin Chocolate Chip Muffins
- 4 eggs
- 2 cups sugar
- 1 (16 oz.) can pureed pumpkin
- 1 1/2 cups oil ( I used 1 cup vegetable and 1/2 cup coconut oil)
- 3 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 package chocolate chips
Makes 24-30 muffins.
These are so good and moist, a definite keeper!!
