A Bergel Family Favorite

My husbands mother used to make this for him, and now he asks me to make it. It is a simple potato dish with cheese and onions...


chop onions and potatoes (leaving skins on potatoes)
cover the bottom of the pan with olive oil
put sliced or chopped onions in the olive oil until translucent
add about a 1/2 inch of water to the pot
add chopped potatoes
bring to a boil
lower heat to simmer
once potatoes are smooshy but not too smooshy take the pot off the burner
cover potatoes with cheese (cheddar, American, any kind you like) and cover

Let the whole thing sit off the burner and covered for about 5 minutes or until the cheese has melted..... Absolutely delicious!!
