Rainy Day Recipes


When it is rainy outside, I think it is time for soup!

Best Cream Of Broccoli Soup
Prep Time: 10 Minutes
Cook Time: 25 Minutes
Ready In: 35 Minutes
Servings: 6
Ingredients:
2 tablespoons butter
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth

8 cups broccoli florets
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste
Directions:
1. Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
2. Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
3. In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.
I added cheddar cheese to step 3.

Banana Loaf


Ingredients:
unsalted butter, for greasing
1 cup white self-rising flour (I used bread flour)
3/4 cup light brown self-rising flour
3/4 cup packed raw brown sugar
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2 large ripe bananas, peeled
3/4 cup orange juice
2 eggs, beaten
4 tbsp canola oil
sea salt

Directions:
1. Preheat oven to 350, lightly grease and line a loaf pan. (I made muffins because my loaf pan has mysteriously disappeared.
2. Sift the flours, sugar, a pinch of salt, and the spices into a large bowl.
3. In a separate bowl, mash the bananas with the orange juice, then stir in the eggs and oil. Pour into the dry ingredients and mix well.
4. Spoon into the prepared loaf pan and bake in the preheated oven for 1 hour, then test to see if it is cooked by inserted a skewer into the center. If it comes out clean, the loaf is done. If not, bake for an additional 10 minutes and test again.

**I added 3/4 cup chocolate chips and made muffins. For the muffins I baked them for 20 minutes.**
