A few good recipes...

I love casseroles!! My husband not so much, but I love them. They are easy, yummy, and still good the next day.
So I made this casserole last night and even my casserole hating husband said it was delicious..


Easy and Delicious Chicken and Rice Casserole

Ingredients

  • 1 cup uncooked white rice
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 7/8 cups water
  • 1 (1 ounce) package dry onion soup mix
  • 4 skinless, boneless chicken breast halves

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Spread rice in the bottom of a 9x13 inch baking dish. Rinse chicken and pat dry; arrange chicken pieces on top of rice.
  3. Mix soup and water together and pour over chicken and rice. Sprinkle dry onion soup mix on top. Cover and seal TIGHTLY with foil. Bake in the preheated oven for 1 to 1 1/2 hours. Enjoy! 
 I made a few modifications:
I cut the chicken into bite size pieces and put it on the bottom of the casserole dish. Mixed the rice with the rest of the ingredients (including the mushrooms) and poured it over the chicken pieces. I also made my own onion soup mix (found here), sauteed mushrooms and added those in with the cream of mushroom and at the end I added some steamed broccoli.

 We have also had a plethera of apples in our house lately. So instead of toting them around in my purse until they are bruised and unedible... it happens, I made this yummy apple crisp..

Apple Crisp II

Ingredients

  • 10 cups all-purpose apples, peeled, cored and sliced
  • 1 cup white sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup water
  •  
  • 1 cup quick-cooking oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup butter, melted

Directions

  1. Preheat oven to 350 degrees F (175 degree C).
  2. Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  3. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
  4. Bake at 350 degrees F (175 degrees C) for about 45 minutes.

 I made a few modifications to the recipe also...

I used 5 apples and 1 pear, mixed the sugar mixture in with the apples (instead of spreading it on top), I skipped the water, and added freshly grated nutmeg on top. This was absolutely delicious. Not exactly low fat or low sugar.. but good!
