Finger Food for Dinner??


Okay I am always on the quest to use all the veggies we get from the co-op, which is always a lot. For some reason between the four of us we always have left overs right before Thursday (pick up day). So this week in my adventures to use all we have I made finger foods for dinner. So we had smashed chicken fingers, steamed green beans, and potato fries.
Smashed chicken Fingers
take 2 chicken breasts and smash to as flat as you can, dip in scrambled egg, then bread crumbs. Put this into a greased glass dish into a 350 degree preheated oven for 15 minutes, flip then 15 minutes more.

Potato Fries
Cut potatoes into slices (like fries) and place on baking sheet into 350 oven until cooked through, then set under broiler until cooked golden brown.

Steamed Green Beans
break off tops and bottoms of green beans and cut in half, lay on steamer and steam for about 10 minutes or until they are made to your liking.

This wasn't a very flavorful meal, but we all cleaned our plates!!
