Using the Co-Op tomatoes

Okay so yesterday everyone received (I think) 6 roma tomatoes, and there were extra. So tonight I decided to use all of them, much to my husbands dismay. I usually use a can of diced tomatoes for this recipe, but fresh is always better.
Sausage tomato noodle stuff
4 apple chicken sausage links
homemade noodles (recipe to follow)
6 roma tomatoes
1/4 onion
1 garlic clove (preferably fresh)
olive oil

1.line the bottom of a skillet with the olive oil and let that warm
2. cut up the roma tomatoes into small chunks and add to the warm olive oil
3. dice up the onion and garlic together (I used a handy mixer) and add to tomatoes
4. cut up the sausages and add to the tomato, onion, garlic, olive oil mixture

Now before this whole process even starts you have to make your noodle dough and put it in the refrigerator to cool.
Basic Noodle Recipe
INGREDIENTS
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 2 tablespoons water

DIRECTIONS

  1. In a medium sized bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. Mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water.
  2. On a lightly floured surface, knead dough for about 3 to 4 minutes. With a pasta machine or by hand roll dough out to desired thinness. Use machine or knife to cut into strips of desired width.

I used my Kitchenaide pasta attachment for fettuccine and just cut the noddles short and tossed them into the boiling water.
After the noodles boiled for about 3 minutes I added them to the pan with tomatoes, sausage, onion, garlic, and olive oil to mix.
Heat until everything is blended nicely and serve with Parmesan cheese... mmmmm Delicious. Always a crowd pleaser at our house.
