Pac Choi-Joi Choi

 Joi choi is a common and mild-tasting variety of pac choi with dark green leaves and a white stem. Pak choi is fat and cholesterol free, and a good source of vitamin A, vitamin C, and folate.
Joi Choi Soup
• 3 cups broth (chicken, beef, or vegetable)
• 10 leaves joi choi, thinly sliced
• 2 teaspoons soy sauce
• 2 teaspoons Asian sesame oil
• 1 teaspoon red pepper flakes
• 1 garlic clove, peeled, chopped
Bring the broth to boil in a medium saucepan. Stir in the red pepper flakes, soy sauce, Asian sesame oil, and chopped garlic.
Add the joi choi. Simmer for up to 10 minutes, until the joi choi leaves turn dark green and are wilted and tender.
Try this soup also with cooked chicken, beef, shrimp or tofu.

Joi Choi Stir Fry
Basic Stir-fry with Peanut Oil and Garlic
1 pound joi choi (or a mixture of different chois)
2 Tb peanut oil
1 tsp sugar
1 tsp minced garlic
salt or soy sauce to taste

Cut stems into 1-inch pieces and slice leaves coarsely.
Heat wok or heavy frying pan. Pour oil in. Add stems and toss over moderately high heat until somewhat softened, about 2 minutes.
Add sugar, garlic, salt and soy sauce. Add reserved leaves. Toss another 2 minutes. Serve. (Yield: 2 servings)

Cabbage Roll Casserole
Servings: 12
Ingredients:
2 pounds ground beef
1 cup chopped onion
1 (29 ounce) can tomato sauce
3 1/2 pounds chopped cabbage
1 cup uncooked white rice
1 teaspoon salt
2 (14 ounce) cans beef broth

Directions:
1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large skillet, brown beef in oil over medium high heat until redness is gone. Drain off fat.
3. In a large mixing bowl combine the onion, tomato sauce, cabbage, rice and salt. Add meat and mix all together. Pour mixture into a 9x13 inch baking dish. Pour broth over meat mixture and bake in the preheated oven, covered, for 1 hour. Stir, replace cover and bake for another 30 minutes.
