Co-Op vegetable recipes

I felt very creative tonight and tried to use as many co-op items in my meal. There are no pictures because we ate almost everything...
Moist Turkey Burgers
Ingredients:
1/3 cup finely chopped onion
1/2 tsp canola oil
1/2 cup soft bread crumbs
1/2 tsp soy sauce
1/2 tsp Worcestershire sauce
1/4 tsp garlic powder
1/4 tsp poultry seasoning
1/8 tsp ground mustard
1/8 tsp pepper
Dash salt
1/2 pound lean ground turkey

Directions:
1. place onion and oil in a small skillet; cover and cook for 3-4 minutes or until very soft, stirring occasionally. Cool
2. In a large bowl, combine the bread crumbs, soy sauce, Worcestershire sauce, garlic powder, poultry seasoning, mustard. pepper, salt, and onion. Crumble turkey over mixture and mix just until combined. Shape into patties. Wrap in plastic wrap and refrigerate for at least 20 minutes.
3. In a nonstick skillet coated with nonstick cooking spray, cook patties over medium heat for 4-5 minutes on each side or until a meat thermomenter reads 165 degrees F. Serve on buns with lettuce and tomato.

**These are great on the grill with swiss cheese, you can add shredded cheddar to the patties, or mushrooms and they are still very tasty**

Zucchini With Vidalia Onions and Balsamic Vinegar

A quick and tasty side dish, great for hot days.

Ingredients:

  • 2 medium zucchini or yellow summer squash (about 1 pound)
  • 2 medium Vidalia sweet onions, chopped
  • 2 tsp. olive oil
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. chopped fresh mint
  • 2 tbsp. chopped fresh parsley
  • 1/2 tsp. salt
  • Pepper to taste
  • 2 tbsp. chopped pecans, optional

Preparation:

Cut zucchini into strips about 1 1/2-inches in length. Spread zucchini and onions in a microwave-safe dish. Cover loosely with plastic wrap and microwave for 5 minutes on HIGH. Meanwhile combine oil, vinegar, mint and parsley in a small container. Cool zucchini and onions for 3 to 4 minutes then toss with oil and vinegar mixture. Sprinkle with pecans, if used; serve warm or at room temperature.
Serves 4.


I also used the potatoes to make baked french fries... very tasty
