Non-Dairy Scalloped Potatoes

Alex is on a non-dairy, non sugar diet right now so I have been trying to make as many non dairy side items as I can. I know that Alex does not prefer potatoes, but I had a lot of them left from 5/28. I found this recipe and it was really tasty, so I thought I would share!!

Best Ever Scalloped Potatoes (No Dairy)

Ingredients

12 potatoes sliced thin
3 onions, finely chopped or sliced thin if you prefer
1/3 c butter or non dairy margarine for those of you looking for a totally non dairy margarine earth balance has no milk products in it.
3 c boiling chicken broth
1/3 c all purpose flour
salt, pepper and paprika to taste

Directions

1.In 2 shallow, well greased 2 Qt. Casserole dishes layer, Potatoes and Onions sprinkling with salt and pepper between each layer.
2.In a medium sauce pan melt Butter or Margarine over medium heat. Stir in flour until well blended. Whisk in chicken stock; cook stirring constantly until it boils and thickens.
3.Pour sauce over potato casserole and sprinkle with paprika to taste.
4.Bake uncovered at 350 degrees for about 50 minutes or until potatoes and tender and golden brown 

I halved the recipe, added 1/2 cup more broth, a tablespoon of Worcestershire sauce, and used the green onions from 6/2. These were delicious and my kids Loved it!
