Breakfast fit for an Anniversary
Today is our 6th wedding anniversary. We have had 6 wonderful years together as husband and wife, 1 year as friends, and 1 year dating. We have had 2 beautiful boys together and share a home filled with love, compassion, and patients. This morning I celebrated this with a belly filling, artery clogging breakfast of pancakes, bacon, eggs, and hash browns. Here is how I did it:
Homemade Pancakes from scratch
INGREDIENTS:
• 1 egg
• 1 cup flour
• 3/4 cup milk ( I usually add a bit more to my desired consistency)
• 2 Tablespoons oil
• 1 Tablespoon sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
DIRECTIONS:
Mix your dry ingredients together, then add in your wet ingredients. Mix until smooth and to desired consistency. I pour into a measuring cup I have with a pour spout but you can use whatever. Pour out onto semi-hot griddle; not too hot or the middle of your pancakes won’t cook through. When it’s bubbled up on one side, flip! Serve with your favorite syrup, fruit or sugar!
As I was cooking the pancakes I had the bacon in the cast iron skillet and eggs on the back burner. I made hash browns after the bacon was done with a grated potato (from the co-op a few weeks ago). I just used my grater and grated the potato into a pile and place it into the skillet with left over bacon grease. I watched the potatoes and made sure that they didn't burn and flipped them only once.
Not a very healthy breakfast, but a good one none-the-less.
