Honey Roated Potatoes

Since Alex cannot have dairy, I am always looking for other sides to serve. We love potatoes, so any type of potato dish is always welcome. The usual mashed does not work anymore since it normally calls for milk, sour cream, or cheese. So I found this fantastic recipe that I will definitly add to my usual potato rotation...


Honey Roasted Red Potatoes

 

 

 

 

Ingredients

  • 1 pound red potatoes, quartered
  • 2 tablespoons diced onion
  • 2 tablespoons butter, melted
  • 1 tablespoon honey
  • 1 teaspoon dry mustard
  • 1 pinch salt
  • 1 pinch ground black pepper

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray.
  2. Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
  3. Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.

 A few changes I made:

I only had Yukon potatoes, so I used those. I used a square baking pan, put a little Olive Oil in there with a smashed garlic clove. I put that in the oven while I was chopping the potatoes and onions. After everything started to sizzle I put the potatoes in, poured the sauce over it, and tossed everything. I cooked it for 30 minutes covered in foil, then 10 more minutes uncovered. Everyone LOVED these potatoes!!
