A little time in front of the stove
Okay so I had a pretty busy day and really thought I would not be cooking much tonight, but much to my surprise indeed I was. For dinner I made baked chicken tenders:
I took 2 chicken breasts and smashed them to about 1/2, cut into slices, dipped into an egg mixed up, then into breading and put into a pan into the oven for 15 minutes on each side at 350. Then I made mashed potatoes with red potatoes, sour cream, and cheddar cheese. And to top it all off I boiled some corn on the cob I got from Sweet Bay last week.
Once all that was done I thought while the stove was still warm I would continue cooking a little more. So I made some Kettle Corn for dessert and then started making baby food. Alex is almost done with the purees, but I still have some vegetables from last week so he will get some more purees. I had an abundance of carrots and will have more tomorrow so carrot puree was on the menu for tonight. I steamed the carrots in the steamer for about 30 minutes, put the carrots into the blender, blended until smooth and portioned out into baby food containers.
Also I made my first Co-Op order and in that is:
Carrots, With Tops, Cal Organic,
Celery,
Cucumbers,
apricot
Potatoes, Russet, , Organic
Banana, Breaker, Del Monte,
Tomatoes, Roma (Plum),
fugi apples
I will make a salad with the carrots, celery and cucumbers. Apricots, bananas, and apples will be baby food. Nothing much exciting for baking/cooking this week, but will post if I come up with anything interesting!!
When I make the salad,which will probably be a chicken salad, I will post the recipe and pictures.

Holy crap you're a busy woman. Must have been that both boys napped good after all that tearing around this morning. AND...you go girl with all that yummy supper. I totally have to do the chicken tender strips. Dexter would love those!!
