A little Cilantro to freshen the room
It's been a little while, nothing much going on, no grand meals to report on. So we are on our everlasting mission to get some kind of garden going, and are now attempting herbs. So we bought mint and cilantro. Now I am pretty sure that Cilantro is cheap, but when you buy the plant it is 4.99, when you buy a bunch at Publix it is .79???? So we will see if it is cost effective. Anyway I made some delicious homemade salsa today for a yummy recipe a good friend of mine shared with me.
Fresh Salsa
Ingredients: (these are the actual measurements, but I approximate when I make it myself)
3 tablespoons finely chopped onion
2 small cloves garlic, minced (fresh is best)
3 large ripe tomatoes, peeled and seeds removed, chopped ( I don't peel them)
2 hot chile peppers, Serrano or Jalapeno, finely chopped ( I don't add those)
2 to 3 tablespoons minced cilantro
1 1/2 to 2 tablespoons lime juice (I just squeeze 1 large or 2 small limes)
salt and pepper (I skip this also)
preparation:
Put chopped onion and garlic in a strainer, pour 2 cups boiling water over them then let drain thoroughly. Discard water. Cool.
Combine onions and garlic with copped tomatoes, peppers, cilantro, lime juice, salt, and pepper. Refrigerate for 2 to 4 hours to blend flavors.
Makes about 2 cups
