Apple Oatmeal Cookies
Okay so I was left with quite a few of those red apples two weeks ago. For some reason my kids did not like to just eat them, like they do the other apples. So as the days went by and I stared at these apples I felt compelled to do something with them. With that in mind I set to thinking what kind of cookie did I want to make? A snacking one? big one? hhmmm??? Well, I finally decided that I needed to make a cookie that would be good for the boys to eat on the run on the way to school. So I found this recipe and I think it will work quite well. I plan to freeze some and warm them in the mornings. My only complaint is that I wish they were thicker.
Ingredients
- 1 c. finely diced unpeeled apples
- 1/4 c. raisens
- 1/4 c. chopped pecans or walnuts
- 1/2 c. sugar
- 2 TB water
- 1 c. unsalted butter
- 1 c. brown sugar
- 2 eggs
- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp salt
- 1/2 tsp cloves
- 1/2 c. milk
- 2 c. oatmeal
How to make it
- Preheat oven to 375 degrees.
- In a saucepan combine apples, raisins, nuts, 1/2 c. sugar and 2 TB water. Cook and stir until the mixture is thick and apples are tender. (about 10 minutes) Set aside.
- Cream butter and brown sugar until fluffy, beat in eggs. Sift together flour, baking powder, cinnamon, salt and cloves, add alternately with milk to creamed mixture. Stir in oatmeal.
- Reserve 3/4 c. of the dough. Drop the remainder of the dough from a teaspoon onto a greased cookie sheet, make depressions in the center, top with apple filling and a dab of the reserved dough. Bake at 375 degrees for 10-12 minutes. Makes 3 dozen.
