Lemon Pancakes

 

Whisk together in a large bowl:

1 cup all purpose flour

1/3 cup sugar

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

 

Combine in another bowl:
¾ cup sour cream

1/3 cup milk

Finely grated zest of 2 lemons (I skipped this part)

¼ cup fresh lemon juice

3 tablespoons butter, melted

1 egg

1 ½ teaspoon vanilla extract

 

Quickly mix the liquid ingredients into the dry ingredients. The batter will be thick and bubbly. Cook as you would normally cook pancakes.. Enjoy!
