Halloween Fun! and a recipe for Delicata Squash Soup

October is a busy month for us. Alex turned 2 on the 20th, Halloween, family visits...whew it is a lot!!
This year Alex decided to be a Bumble Bee and Luke is Wolverine.

This was Alex's Birthday cake. He chose these cute Halloween Cupcakes... one for each of us!
 Alex does not like having his picture taken... especially when he just woke up from a nap. I had school on Alex's birthday so we had to do the birthday celebration a little early.

Delicata Creamy Squash Soup

 

 

 

 

 

 

Ingredients

  • 3 delicata squash, halved lengthwise and seeded
  • 1 onion, chopped
  • 3 cups vegetable broth
  • 1 1/2 cups heavy whipping cream  **I used half and half**
  • 2 tablespoons butter
  • salt to taste
  • ground black pepper to taste

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Place the squash, cut sides down, in a baking dish. Add 1/8 inch water in baking dish, cover with foil and bake 35-40 minutes or until tender. Cool.
  2. In a large saucepan, melt butter. Add onion and cook over low heat, stirring occasionally until onion is softened but not brown.
  3. Scrape the squash out of the flesh and add to onions. Add the stock and heavy cream. Cook over moderate heat, stirring occasionally, about 25 minutes.
  4. Puree the soup in a blender or food processor. Season with salt and pepper to taste and serve.

Verdict: We all loved this soup. I personally do not like squash, but this was a really nice creamy soup that I could eat often. It was similar to a bisque and would also compliment shrimp or crab as an addition.

Cute pictures! I made the soup too and we really liked it. I made a few changes. I added about six large stalks of celery and two garlic gloves to the onions. I used half the cream, and added both nutmeg and ginger. So very yummy!
