Bacon, Potatoe, and Cheese Waffles



Sausage, Potato, and Cheese Waffles

1 link sweet Italian sausage (about 3 ounces) casing discarded
1 baking potato, grated and excess water squeezed out -- very important
4 tbsp butter
1 3/4 cup flour
1 tbsp baking powder
1/2 cup shredded cheddar cheese
1 tbsp chopped flat-leaf parsley
1 1/4 tsp salt
1 1/4 tsp pepper
2 cups milk
2 large eggs

1. In a medium skillet, cook the sausage over medium high heat, breadking it up with a fork, for 5 minutes. Add the potatoe and butter, lower the heat and simmer until the butter is melted, about 2 minutes, remove from the heat and let cool, about 10 minutes.
2. In a large bowl, whisk together the the flour, baking powder, cheese parsley, salt and pepper. Stir in the milk and eggs until smooth, Stir in the sausage-potato mixture,
3. Using a waffle maker, cook the waffles according to the manufacturer's directions.

I made a few changes; I swapped out sausage for bacon and used dried parsley instead of fresh, and decreased the butter by 2 tablespoons. These were delicious and even better the next day.

There is also a suggested topping (I didn't make it though) Combine 2 parts ketchup to 1 part maple syrup and microwave for 25 seconds.

What a great idea to make waffles or even pancakes a little more nutritions and add protien! Where do you get these recipes? You should mention where they are from in your posts so if we like them we can look for other recipes in that book.
YUMM....maybe we'll have 'full breakfast in a waffle' waffles soon! :)

Well, I don't know about how nutritious they were, but they were soooo good. I got this recipe from the Rachael Ray Magazine for November... I think. It was the most recent one to come to my house at least?? :)
OOOOhhhhhhh full breakfast in a waffle... I'll take two!!
