Easy Pasta Sauce

Tomato Sauce
In a medium skillet, combine 3 tablespoons extra-virgin olive oil, 2 tablespoons finely chopped flat-leaf parsley (SweetBay was out of these so I used the parsley in the tube), and 1 1/2 teaspoons finely chopped garlic (I used one fresh clove chopped), and 1/4 chopped onion over medium-high heat. When the everything is sizzling, add 2 cups chopped canned peeled tomatoes with their juice and season with salt. Lower the heat to medium and cook stirring occasionally, until the liquid has evaporated and the oil begins to separate from the sauce, 20 - 25 minutes.

YUMMM....I love making my own pasta sauce too. I use a recipe from recipezaar.com called Kittencal's Italian Tomato Pasta Sauce (I can't seem to get the link to work!)
It's awesome...we like it because it has a tad of spice at the end.
