What will be in your co-op bins this week! 8/30

Pasta with co-op stuff...
I always try to put as much of my co-op bins in our meals as possible. On Friday I tried putting a few items in that I thought would taste good and they DID!!
Here is what I did:
1. I put some Spanish Olive oil in a large pot
2. Put some shallots and garlic in until translucent
3. Sliced the Roma Tomatoes and threw them in the pot
4. Sliced up the mushrooms and threw them in also
5. I let everything simmer for a while
6. Then I took 2 large collards leaves, washed them, took the stem out, rolled them up and sliced them... and tossed them in also
7. After everything was simmering in their juices I added 1 cup of chicken stock and a tablespoon of Earth's Origins Buttery Spread
8. Then I pulled out a bag of frozen chopped chicken, from when Whole foods had chickens on sale, and tossed that in.
9. I let everything simmer together and defrost.

While that was cooking I boiled some thin spaghetti noodles.

Threw everything on a plate, grated some parmigiana cheese on top and BAM!! dinner!! and it was delicious!! Everyone ( and I mean everyone) cleaned their plates!
